Citrus and Thyme Roasted Wild BC Salmon
One of the easiest and more simple ways to prepare Wild BC Salmon is to roast it or bake it. Dress the fish with whatever suits your taste, put it in the oven or BBQ, and let it do all the work! Easy peasy, and it lets you get on with the rest of the dinner! Here is a solid starter way to do it and get yourself on the way to the best Wild BC Salmon ever!
Ingredients
1 fillet - Wild BC Sockeye Salmon
1 Orange – Skin peeled and white pith removed.
1 Shallot – Fine sliced
2 cloves Garlic – Smashed
Fresh Thyme – 5-6 sprigs
Salt and Pepper to taste
Splash of white wine or water in the bottom of the roasting tin
Directions
Start by preheating your oven to 350ºf.
Clean Salmon under running water to remove any excess from the store. Pat dry. Season with salt and pepper.
Using a sharp knife, cut and peel the orange, taking all the rind and white with it. You only want to see the bright orange flesh for this. Segment each piece from the orange so that all you have is the juicy flesh! This may take some time, but make sure you are careful and use a sharp knife to make it easier! Chop up your shallots as well!
In the bottom of the pan, place the rinds that you have cut of the orange, the wine or water, some of the shallots, and Garlic Cloves. This will steam the Salmon from the bottom and cook quickly and evenly. Place your Salmon on top of the orange rind and then dress the Salmon with the orange segments, shallots and thyme. Add more salt and pepper if you wish.
Place in the oven and Roast for 22-25 min, checking in on the Salmon at the 20 min mark if you want to be safe. Remove when the flesh flakes away from the Skin.
Remove and serve with rice and veggies, or in Tacos, or eat it from the pan!
