How to Poach Wild BC Salmon
One of the many benefits of poaching Wild BC Salmon is that it doesn’t give your kitchen (our house) that “cooked fish” smell. Poaching is also super fast to do, you can have dinner on your plate in less than 15 minutes!
Ingredients
1-2 large Wild BC Salmon fillet(s), thawed (depending on the # of people to feed) . You can keep the skin on if you prefer.
Salt
1 shallot, peeled and thinly sliced or a few thin slices of onion
Black peppercorns
Fresh or dried parsley (garnish)
Fresh Rosemary
Fresh Dill
1 lemon
½ cup dry white wine (a good Sauvignon Blanc)
½ cup water
Directions
Sprinkle the salmon fillets with a little bit of salt. Combine wine, water, dill, rosemary and onions in a sauté pan, and bring to a simmer on medium heat.
Place salmon fillets, skin-side down on the pan and cover.
Cook 5 to 10 minutes, depending on the thickness of the fillet, or to desired done-ness. Do not overcook.
Before serving, squeeze a little more lemon juice over the fillets and sprinkle with parsley, pepper and other fresh herbs.
