Ingredients

  • One Fillet of Wild BC Smoked Salmon (buy local if possible)

  • Pasta – any kind will do but I do like a smaller noodle for this like an Orecchiette

  • One bunch of asparagus – each stalk cut into 1-2” pieces

  • 4-5 radishes – shaved on a mandolin or with a sharp knife

For the Sauce

  • ¼ cup sour cream

  • 1 lemon – zested and juiced

  • 10-12 capers – smashed

  • ½ tsp chili flakes

  • 2 tbsp chives – finely diced

  • Salt and pepper

Let’s Begin!

  1. Get your pasta on and cook to desired doneness as per package details.

  2. Mix together all the sauce ingredients and allow to sit to come together before dressing the pasta with it.

  3. Once pasta has about 1 minute left on the cook time, add the asparagus to the water and allow to cook. Drain it all together. Allow to steam for a minute.

  4. Add radish and sauce to pasta and mix well.

  5. Break up your Wild smoked BC Salmon into 1-2” pieces. Mix half the fillet into the warm pasta.

  6. Plate your pasta and finish the dish with a few more pieces of the salmon on the top and sprinkle with chives and chilis.
