Wild BC Salmon Patties

Ingredients

  • 3 cups of Leftover Wild Salmon (cooked)

  • 1 large Russet potato

  • 2 eggs

  • ½ cup breadcrumbs

  • 2 tbsp fresh minced parsley

  • 2 tbsp fresh minced dill

  • ½ cup minced onion

  • salt & pepper

Let’s Begin!

Peel and cube one large russet potato. Put it in a saucepan and cover with water. Boil for approximately 15 minutes or until potato is soft.  Drain and mash the potato in the pot. Transfer to a large glass bowl until cool.

Crumble cooked, cooled salmon and remove all bones. You’ll need approximately 3 cups of salmon. Add to the mashed potatoes. Add eggs, bread crumbs, fresh minced parsley, fresh minced dill, finely minced onion, salt and pepper to taste. Mix all ingredients together by hand and form into 2-3” patties. Press both sides of patties into more breadcrumbs.

Pour approximately two tablespoons of vegetable oil into a non-stick frying pan. When the oil is hot, carefully slide the salmon cakes into the hot oil, then reduce the temperature. Saute on low heat until golden (approximately five minutes per side.) 

Yield:  Approximately 8 salmon cakes.

Serve with: Greek salad or a mixed green salad.
