Wild BC Salmon Thai Curry Soup

 

This dish is super simple and quick to make, perfect for a week night! Jazz it up with chilis if you want, or add the soup over noodles.

 Ingredients

  • 1 tbsp Olive Oil

  • 1 small Yellow Onion  - Fine Diced

  • 4 cloves Garlic – Fine Dice

  • 1 tbsp Ginger – Fine Grate

  • 3 tbsp Green Thai Curry Paste

  • 2 cans of Coconut Milk (full fat )

  • 1 cup Vegetable Stock

  • 4” piece of Lemongrass – smashed open

  • 2 Yellow Bell Peppers – 1” dice

  • 3 heads Bok Choy – sliced

  • 1 ½ lbs Fresh Wild BC Coho Salmon – cut into 1” cubes (or wild salmon of your choice)

  • Salt and Pepper
     

Garnish

  • Green Onion, Lime Wedges, Cilantro

 Instructions

  1. Heat Pot over medium heat. Add oil. Once heated, add onion, garlic, and ginger. Sauté for 2-3 min. Add the curry paste and cook for another 2-3 minutes. Add coconut milk, veg stock, lemongrass, bok coy and yellow pepper and allow to come to simmer for 4-5 min. Remove lemongrass.

  2. Add salmon pieces and stir in to soup. Continue to simmer for another 3-4 min till salmon is cooked through and flaky! Taste and add salt or pepper to taste.

  3. Enjoy!
