Lemon Garlic Pan Seared Wild BC Coho Salmon

 

What could be better for dinner than Wild BC Salmon? Why not season it with spices from a local spice company? The combination of Grandpa J's Seasoning's Lemon Greko Seasoning and the juicy Coho Salmon portions is a match made in quick and easy meal paradise. This recipe will become your next healthy midweek supper.

Ingredients:

  • 1 4-5oz portion Wild BC Coho Salmon per person

  • ½ tsp Fresh Black Pepper per portion

  • 1 tsp Grapeseed Oil to coat the Salmon

  • 2 tbsp Grapeseed Oil for Searing

For the Lemon Garlic Sauce

To Serve

  • Fresh Lemon Slices

  • Chopped Parsley

Directions

  1. Begin by portioning the Wild BC Coho Salmon into 4-5oz portions. Coat each with 1 tsp of Grapeseed Oil and rub over the whole piece. Season with Fresh Pepper. Place a large pan on medium-high heat and add the other Grapeseed oil to the pan. Allow it to come to a high temp (oil should be shimmering), and add your Coho skin side down to the pan. Don’t crowd the pan; do this in batches if you need to. Sear the skin side for 3 min and flip so the flesh takes a turn on the heat. Sear again for 3 min and remove. Continue till all your servings of BC Salmon are seared off.

  2. Remove the Oil from the pan and place it back on medium heat. Add all of the Sauce ingredients to the pan and bring to a simmer. Mix well to make sure it's all incorporated. Once the sauce has come together, add the Coho portions back to the pan flesh side down (into the sauce) and gently simmer for 4-5 min or until the Coho is cooked to your liking. Remove the Coho from the pan, and set on a serving plate. Pour the sauce over the Salmon and serve with Fresh Lemon Slices and Parsley.
