Lemon Greko Glazed Sheet Pan Wild BC Coho Salmon

 

Let's preheat the oven and prepare the sheet pans, because this is a quick and healthy meal for the family! This recipe requires very little effort, and the greatest thing is that you'll appear like a Chef when you bring it to the table! Using the local seasoning from Grandpa J's Seasoning also takes a lot of the guesswork out of it. This dish has a touch of sophistication and a dash of sass!

Ingredients:

  • 1 – 4-5oz portion Wild BC Coho Salmon per person

  • ½ tsp Lemon Greko Seasoning from Grandpa J’s Seasoning per portion

  • ½ tsp Fresh Pepper per portion

  • 1 tsp Grapeseed Oil per portion

  • 3 tbsp Vegetable Stock

  • 1 tsp Lemon Greco Seasoning

  • 4-5 Baby Potatoes per person – Washed and Cleaned

  • ½ tsp Lemon Greko Seasoning per potato serving

  • 2 tsp Grapeseed Oil per serving

  • 1 cup Trimmed Broccoli per person – Sliced thin for quick cooking

  • 1 tbsp Grapeseed Oil per portion

  • 3 tbsp Fresh Grated Parmigiano per portion

To Serve

  • Fresh Lemon Wedges

Directions

  1. Start by putting a pot of water on the stove and boiling it. Also, preheat your oven to 375f. Add the potatoes to it and cook till tender. Drain and allow to cool a bit. While waiting, get a sheet pan layered with parchment paper (for easy clean up). Next, cut up the broccoli and add it to your sheet pan. Cover in the oil and Parmigiano. Once the potatoes are cooled, use a glass to “smash” them down to flatten them to roughly ½” thick. Add to the sheet pan and cover with the oil and Lemon Greko Seasoning.

  2. Take your Wild BC Coho portions and oil them up. Add your pepper and Lemon Greko Seasoning to them and place them into the middle of the sheet pan. Once the oven is to temp, add the sheet pan to it and allow to cook for 14 min.

  3. Mix the stock and seasoning while the Sheet Pan Meal is cooking. Once the timer is up, remove the pan and spoon the mixture over the Coho portions. Turn the broiler on and allow it to heat for a minute. Place the pan directly under the broiler and cook for another 3-4 min or until the broccoli and potatoes have crisped up. Remove from the oven and plate!

  4. Serve with Fresh Lemon wedges and a bit more Lemon Greko mixture for the table if they want it!
