Chili Grilled Wild Salmon with Mango Strawberry Salsa

 

Savour the flavours of summer like mango and strawberries, even in fall with this delicious recipe from Fisherman Roger Arnet.

Roger has been a salmon seiner since he was 15 years old, and is part of a “new breed” of commercial fishermen who create and market value added salmon products.

Ingredients for Salmon

1.5 lbs Wild Salmon Fillet - skin on

2 Tbsp of Chili Oil

2 Tbsp of Lime Juice

2 Tbsp of finely chopped Cilantro

1 Tbsp of finely grated fresh ginger

2 Garlic cloves minced


Ingredients for Salsa

Diced strawberries (as many as you’d like!)

1 mango - peeled and diced

1/4 cup chopped green onion

12 tbsp chopped cilantro

1 tbsp salmon mixture from above

Salt and Pepper to Taste


Directions

1. Preheat BBQ to medium-high and oil the grill.

2. Mix together all the ingredients except for the salmon in a small bowl and reserve about 1 tbsp to use for the salsa, smear the remaining mixture over the flesh side of the salmon.

3. Sear salmon flesh side down for 3 minutes, turn over, cover grill and cook for another 7-10 minutes until salmon is flaky when pressed with a fork.
