How to Preserve Wild BC Salmon in a Mason Jar
Ah fall - the leaves are changing colour and there is a cool crispness to the air. Fall is also the perfect time to preserve jars of Wild BC Salmon so you have a delicious, healthy treat to enjoy all winter long!
Ingredients
1 whole (16 Oz. Size) Wild Salmon Fillet, Skin Removed
4 Tablespoons of Coarse Sea Salt, Coarse Himalayan Pink Salt, Fine Sea Salt, or Canning & Pickling Salt
2 Tablespoons Sugar
1 small red onion - thinly sliced
6 cloves garlic
2 whole Bay Leaves
1 Tablespoon Black Peppercorns
1 Tablespoon Coriander
Fresh Dill to taste
2 Tablespoons White Vinegar
1 cup Olive Oil (or more if needed to cover)
Directions
Cut your wild salmon fillet on a 45 degree angle into thin slices.
In a small stainless steel bowl, combine the salt and sugar. Toss the salmon slices in the bowl, cover, and cure in the refrigerator for 24 hours.
After 24 hours remove the salmon from the refrigerator and rinse the salmon slices well under running water.
Layer the slices of salmon in a clean mason jar with the remaining ingredients, and fill the jar with oil until the salmon is fully covered.
Seal the jar tightly and refrigerate for a day or two to let all the flavours infuse together. When you are ready to serve, let the jar sit at room temperature until the oil is no longer opaque.
Enjoy this delicious treat on it’s own, or enjoy with bagels and cream cheese!
