Wild BC Salmon Paté

 

Looking for something simple to wow your crowd with during this holiday season? Look no further! This easy Paté makes for a quick, yet elegant appetizer for all to enjoy!

Ingredients:

  • 1 lb Boneless Wild BC Sockeye Salmon

  • 3-4 tbsp Lemon Juice

  • 2-3 tbsp Olive Oil

  • Sea Salt and Fresh Pepper

  • 2 tbsp Crème Fraiche (or you can use sour cream in place of this)

  • 1 Large Shallot – Fine Dice

  • 2 tbsp chopped Parsley

  • 1 Pomegranate

  • Zest of a Full Lemon

  • Crackers or Baguette for serving


Directions:

  1. Heat oven to 350°F (176°C) and prep a roasting tray with foil. Rub your salmon with oil, lemon juice, salt and pepper. Bake for 15-17 min, or till cooked. Remove and allow to cool.

  2. Combine crème fraiche (or sour cream), shallot, parsley, zest of lemon, salt and pepper in a mixing bowl. Crumble cooked salmon into the bowl and mix well. Allow to cool in the fridge for an hour or more before serving with crackers or toasted baguette. Garnish with parsley and pomegranates seeds.

  3. Pour yourself a glass of salmon-safe wine and enjoy!
